Sacre Blue!
/I read that Cos Cob’s Fjord Fisheries has teamed up with a bakery, Flour Walter Salt Bread, and being a huge fan of well made baguettes, I was intrigued. In my experience, very few American bakeries are capable of turning out a baguette worth chewing on, and this one sounds as though it’s one of those few.
Curious as to how much it would cost me to indulge in such a treat next time I was in Cos Cob, I checked out their website, and mon dieu! Everything looks delicious, but such prices! The best baguette I know of near me can be found at The Elephantine Bakery located in downtown Portsmouth New Hampshire, and, while commercial rents are somewhat higher in Greenwich, Portsmouth has been booming the past two decades, and space there is not cheap. And surely, flour, water and salt; even labor, cost about the same.
Subcontractors working in Greenwich often add a “Greenwich premium” of as much as 20% because, as a foundation contractor once told a builder/client of mine, “they can afford it”. It seems that an even higher premium — 25%-55% — applies to bakeries here, and that’s a lot of dough.
